I ...I can't wait to try this -- maybe even tonight. I made fresh mozzarella and wasn't sure what to do with all the liquid. But I want to try your way with lemon juice and make ricotta. It's SO expensive in the store (the fresh mozzarella didn't turn out to be cost effective) and we love to make lasagna, though it ends up costing so much it's not really affordable.
